What to soak shrimp in before grilling
Soaking shrimp in a quick brine not only infuses flavor before cooking, but also helps them retain moisture. If you have the time, this extra step can really help ensure shrimp success! For each pound of shrimp, mix:
- 2 liters of water
- 1/4 cup salt
- 1/4 cup sugar
Whisk together until the salt and sugar dissolve. Soak the peeled and deveined shrimp at room temperature for 30 minutes. Drain the prawns and pat them dry with paper towel. Add your favorite seasoning and get cooking! It not only works well for grilling, but also for pan-frying and stir-frying. The shrimp will come out moist and delicious every time.
Should prawns be boiled before grilling?
When grilling shrimp, raw is your absolute best bet to prevent them from getting rubbery and overcooked. If you have leftover boiled prawns, you can certainly use them on the grill, but the extra cooking step is normally not necessary.
Is it better to grill shrimp with the shell or not?
Shrimp can be grilled with or without the shell, it’s really more of a personal preference. Removing the shells allows any seasonings, marinades, or sauces to really penetrate the meat and get as much flavor into the shrimp as possible. I like to peel them, leaving only a small shell around the tailpiece. Some people say leaving the shells in place helps prevent overcooking, but in my experience a watchful eye can achieve the same thing, with less mess at the table.
A great tip for shellless shrimp on the grill is to use the double skewer method! One row across the top of the shrimp and one row across the tails give them more stability and make them easier to turn. If you’re using wooden or bamboo skewers, be sure to soak them in cold water for a few hours (I usually let mine soak all day!) before grilling to avoid burning.
