Thai stir-fried noodles with shrimp


2 tablespoons of vegetable oil

1 egg

1 tablespoon of tamarind syrup

1 cup small dried rice noodles

1 tbsp dried shrimp, ground

1 tablespoon of tofu, finely diced

1 tbsp shallot

1 teaspoon chopped parsnip pickles

3 each peeled shrimp

1 teaspoon ground roasted peanuts

1 tablespoon of shrimp paste

Chili powder, to taste

Chicken broth, as needed

Fish sauce, to taste


Heat 2 tablespoons of oil over medium heat add the tofu; brown the tofu until golden brown. Add the pickles, shrimp and shallot, continue cooking for 2 more minutes, then add the egg. When the egg begins to set, add the noodles, tamarind syrup and shrimp paste. Keep stirring, add broth if needed Continue cooking until noodles are tender, then add peanuts Add fish sauce and chili if desired. Before removing from the heat, add the bean sprouts and chives. Place on the serving platter. Garnish with fresh bean sprouts, chives, lime wedge and ground peanuts.
